So what do you do when you have been sick all week and not eaten much and you finally start to feel better? You make banana nut bread. The perfect fix to any doctors medicine and even more perfect on a cool fall night.
- 1 cup butter or margarine
- 2 cups sugar
- 4 eggs
- 1/4 teaspoon salt
- 2 teaspoons soda
- 4 cups flour
- 6 large bananas, very ripe, mashed
- 1 cup finely chopped Almonds
In a mixing bowl throw in your sugar, salt, soda, bananas, and almonds. Mash the bananas first then mix it all together.
In your mixer add your flour and butter and blend together adding each egg one at a time. When it is fully mixed add the rest of the ingredients from the other bowl and blend until mixed.
In two bread pans divide the mixture and place in oven at 325 degrees for an hour to an hour and fifteen minutes. You will not regret it.
